In Da Kitchen with Dwight

Unbelieveable! The year is flying by. It's already August and with this heat no one likes being in the kitchen. To be honest I have been cooking much less and eating out more. In any event I am doing ackee and saltfish and boiled green bananas and a sweet potato pudding for you this month. Don't forget that I am not Chef Boyardee. We take our time and do everything to taste. This month I have tried to use the right amount/measure for each ingredient you will need.
Ackee and Saltfish

1/2 lb. Saltfish (codfish)
1 can ackee
(or about a dozen if using actual uncooked ackee)
Cooking oil
black pepper
1 scotch bonnet pepper (this is a hot pepper and is optional)
1 small red or green sweet pepper
1 cooking tomato (I am using an actual tomato)
1 small onion

Both my grandmother Meme, and my mother would soak the saltfish in warm water, drain and then put in cold water and boil it. I just simply skip the soaking step and go straight to boiling it. (This supposedly gets rid of some of the salt as well as cook it.)

If you are using ackee that has just been picked or otherwise uncooked, you will have to clean the ackee by removing the black seeds and all traces of interior red matter. (While growing up it was believed that if not properly cleaned one could become ill or poisoned--Most likely an old wife's tale.)

aindakitchen12.jpg (27533 bytes)Wash ackees. Come on I am serious, wash them properly. Then cover and boil until moderately soft.  Drain, cover, and put aside. (Trust me, just buy a can of ackee. It will be much easier and you will be able to skip this step.)


Pick up (flake) the saltfish and remove all bones. (Again I just buy the boneless codfish so that I don't have to take out the bones.)

Sauté thinly sliced onions, sweet pepper amd tomato. Add flaked salt fish.

Add the ackees, and turn the flame up slightly.

Add black pepper to taste.

Serve with your favorite side dish of   fried dumplings, boiled green

bananas/dumplings, roasted or fried breadfruit, or even rice.

 

Boiled green bananas are very easy. Just slit the banana, place them in boiling water or cold water. Add some salt and a tablespoon of oil. Oil is to keep the banana stain in check while adding a bit of flavor maybe. Leave to boil for about 12 mins and then remove skin as seen below.

SWEET POTATO PUDDING
INGREDIENTS
1 1/2 lb sweet potato
2 ozs yellow yam
3 cups coconut milk
1 t spoon cinnamon
1/2 tspoon ground ginger
1 t spoon mixed spice
1 tspoon grated nutmeg
1 1/2 t spoon vanilla essence
1 1/2 t spoon salt
1 cup brown sugar
4 tble spoon raisins
2 tble spoon currants
1/2 - 1 cup flour
2 tble spoon rum (optional)
1 oz margarine
METHOD
pudding2.jpg (30730 bytes)Puree sweet potato coconut milk and yam in blender.
Pour mixture into a bowl. Add all the other ingreidents except margarine. Mix and pour into a well greased 8" square tin and dot with margarine. Bake at 350 F for 1 - 1 1/2 hours. The pudding sets as it cools. For a firmer pudding add more flour.
