Here I have decided to cook a simple meal. It is very easy and anyone can prepare it. I am not chef Boyardee, but I have never had a complaint. I prepare the meat dish first by cutting up 2 packages of bonesless chicken breast. Chicken on the bone can be used as well. You then seasoned the chicken the way you like it.

For me, I use meat tenderizer, paprika, black pepper, Italian seasonong, oregano, a pinch of salt, soy sauce. I put everything in a closed container and shake it all around. Can leave overnight to marinade.

I then get a deep pot and pour olive oil in. Enough to cover the surface of the pot. Heat oil a bit and then start placing the chicken pieces in. Make sure to cover the entire surface. You should have at least two layers in the pot. Cover pot and let simmer for 15 mins. Turn chicken pieces and let simmer again. Chicken pieces will eventually turn brown. Get one bunch of bak choi (pop chow -- this is a green leafy vegetable). Wash and cut up in small pieces over chicken. Slice one onion on top. Slice one tomato as well. If you want, add escallion for more flavor. Pour two spoons olive oil over the bak choi. Do not stir. Add a pinch of salt and a shake of pepper. Leave to simmer again. If not enough liquid you may add three spoons of water. Leave to simmer. Stir after 10 mins. You will be able to tell when it's ready.

For the rice and beans, (rice and peas) I use one can of Goya pigeon peas, one normal cup of cocnut milk, blk pepper and salt to taste and a small piece of butter. Open the can of beans and empty content into pot. Add two cups of water and one cup of coconut milk.Add the pepper and salt. For more flavor you can beat escallion and add it with thyme.

Bring to a boil. Add 1 cup of rice for every two cups of water. Stir rice in. Leave cover partially off. Bring to a boil and stir again.

Lower flame, cover fully, and let simmer.

Fried plantain is a favorite of mine and goes well with this dish. Get two well riped plantains. In frying pan pour some oil, (I use olive oil - might get  a better flavor with corn oil or vergetable oil) Peel plantains. Slice plantain and place in hot oil. Keep turning until golden brown.

A nice refreshing carrot drink might go well with this meal. You can use fresh carrots and blend it or use a juicer. I use one processed can of carrot (Grace -made in Jamaica) and one can condensed milk with a sprinkle of vanilla. I add the content from the can and a cup of water and a shake of vanilla (can use nutmeg instead). Shake well. Put in freezer to chill until meal is completely ready. Serve over ice cubes.

Ok, I know you all thought I was crazy. This is the finished product. It is very delicious and balanced. Serve it for that special occasion with your  loved one or family.
