In Da Kitchen with Dwight

Here I have decided to cook a simple meal. It is very easy and anyone can prepare it. I am not chef Boyardee, but I have never had a complaint.Well it's Saturday and it's too late for breakfast and still too early for lunch. I decided to make fried dumplings and plantains and egg/corned beef. 
kitchen1.jpg (32839 bytes) These are all the ingredients that you will need. Flour, oil, 2 eggs, baking powder, butter, a tomato, salt, pepper and an onion. Combine 2 cups of flour, a pinch of salt, a tea spoon of baking powder and a table spoon of butter. kitchen2.jpg (26479 bytes)
Add water gradually to the flour combination. I usually use a spoon at first to avoid my hands becoming sticky. Then knead flour with spoon until it becomes less sticky. When dough is less sticky you can use your hands. Don't forget rule number one is to always wash your hands before you start cooking.

Once your dough is ready, start making small dumplings. You take a piece, (not too large) and make round dumplings. You can also make it into a long strip and then create a circle.

kitchen10.jpg (30320 bytes) Make all the dumplings ahead of time unless you are a pro in the kitchen and can do it while frying pan on the stove with low flame. Ok. Place frying pan on stove over low flame, add oil, (just enough to cover the bottom of the frying pan). Heat oil. I use olive oil, but any cooking oil can be used. Place dumplings in hot oil. The finished product should look like this. The dumplings will be golden brown. You can see the one I made from using a strip. Place dumplings to the side on a plate and cover to keep warm. You may also place in a toaster oven.

WOW!!! TASTY..... But we are not done.
kitchen13.jpg (37521 bytes) Fried plantains are easy and goes with everything. LOL!!  I just love fried plaintains.

Fried plantain is a favorite of mine and goes well with this dish. Get two well riped plantains.

Peel plantains. Slice plantains and place in hot oil. Keep turning until golden brown.

Now we are on the last stage of the meal. Chop up your onion and tomato into small pieces. Put it in the hot oil. Keep flame low.

kitchen16.jpg (28974 bytes) Add your corned beef. And stir it in. Place everthing to one side of the frying pan. Break your two eggs on the other side of the pan. Add pepper and salt to everything. Ok, hopefully you are still alive and those for whom you are cooking are still patient. The meal should look like this. Serve with your favorite drink, or with Horlicks/hot cocoa/chocolate.
