In Da Kitchen with Dwight

Well this a quicker whipper bachelor's breakfast. It's Sunday morning, you are exhausted and not quite in the mood. Well get out your simple ingredients. A sweet pepper, a regular hot pepper, blk pepper, salt, two or three eggs (depending if you have company), an onion, a tomato and a lil bit of oil. One of the best tasting scrambled eggs you will have in a while. Serve with ginger tea or an ice cold juice.

Ok, here we go.  Remember that I am not chef Boyardee and I  just go by instinct. Thinly slice the peppers, a quarter of the onion, half the tomato. Barely put some oil in the frying pan and heat. Add the sliced matter. Sprinkle with black pepper and a pinch of salt. Stir fry it.

Add the eggs as in picture. Then let sit for 45 seconds. Add a little more black pepper and some thyme. Start turning the eggs over and over making sure to work in the vegetable matter. In no time it should look like the image below. Serve with toast and tea or your favorite juice. As usual if you try any of these dishes, send me an e-mail at dwight@dwightday.com and let me know how it came out or how you modified it.

If you tried this dish and it was ok, make sure to share the experience.
