Well this a quicker whipper bachelor's breakfast. It's Sunday morning, you are exhausted and not quite in the mood. Well get your simple ingredients out. A sweet pepper, a regular hot pepper, blk pepper, salt, two or three eggs (depending if you have company), an onion, a tomato and a lil bit of oil. Well this month I even got weirder in the kitchen. You might be wondering what the heck is Dwight doing this month? Well join me in da kitchen to find out. It may look weird and unknown (depending on your background) but it's quite tasty. If you need a break from rice, potato and pasta as the starch in your main course, this might be just right for you. Don't worry if you have never heard of breadfruit. In the U.S. you can probably find it in your local West Indian or maybe Chinese grocery store.   Posted September 2002
It's one of my favorite dishes if not my favorite.  It's a sort of chicken pot pie. You might be more familiar with using ground beef to do a Shepherd's Pie. Actually shepherd's pie was one of my favorite meals when I lived in Quebec, Canada. Madeleine, my host mom would prepapre this at least twice per month. Since I was no good at using ground beef, I invented my own method and used chicken breast instead. Ok, enough said. Posted November 2002
Unbelieveable! The year is flying by. It's already August and with this heat no one likes being in the kitchen. To be honest I have been cooking much less and eating out more. In any event I am doing ackee and saltfish and boiled green bananas and a sweet potato pudding for you this month. Don't forget that I am not Chef Boyardee. We take our time and do everything to taste. This month I have tried to use the right amount/measure for each ingredient you will need. Posted August  2002

Well it's the day after July 4th, u r still feeling full and very lazy or a bit tired. I decided that some good ol' cornmeal porridge would do the trick. Doctor Tracia James from Montego Bay, Jamaica, was present to give me a hand and tasteful tips.
