| Well it's the day after July 4th, u r still
feeling full and very lazy or a bit tired. I decided that some good ol' cornmeal porridge
would do the trick. Tracia James M.D. from Montego Bay, Jamaica was present to give me a
hand and tasteful tips. |

Ok, here we go. Remember that we are
not chef Boyardee and we just go by instinct. You will need cornmeal, salt, vanilla,
nutmeg, sugar, condensed milk or any substitute, butter, (coconut milk optional), regular
milk and water. |
| Bring about two cups of
water with a pinch of salt to boil as above. (Add some
coconut milk. This is optional and was my first time adding this. The good doctor said
that it will add a bit more flavor.) In a separate
container add cormeal to another cup of cold water -- as in picture 1 above, then add it
to the boiling water while stirring at all times. It's important to keep stirring so that
there are no lumps. Lower your flame. (Something which I
never really did and caused me problems over the years --lowering the flames might save
you a few frightful pops from the pot). Also you may if you
wish add a tiny piece of butter. Keep stirring occasionally and cover slightly and
leave it to cook for approximately 8 mins.

| Add vanilla, two table spoons
should do the trick. Grate your nutmeg to taste. The
good doctor cautions against using Almond spice since this will make the porridge thin. If you have cinnamon sticks you can add that too. |

| Ok it's time to sweeten this baby. Add
condensed milk, sugar and salt to taste. |

You might wonder how you'll know that it's cooked. The Doc says she looks for a glossy
topping. I just know by instinct and the essence in the air. Seriously depending on the
type of cornmeal you are using, you need to let it. |

WOW!!! TASTY..... They used to say cornmeal
porridge cleans you out and builds you up. The good doctor cautions to watch the portion
because it can be fattening. |

dish of crackers and cheese or french bread, or fried dumplings. |
